Carrot & Ginger Lentil Soup



Prep Time: 5 Minutes Cook Time: 25 Minutes Total Time : 30 Minutes Serves: 4-6


 




 

INGREDIENTS


1 tbsp coconut oil

1 yellow onion, chopped

8 carrots, peeled and chopped

1 tbsp fresh ginger, grated

3 cups vegetable broth

1 cup split red lentils

14 oz. coconut milk

1 tsp salt

Cracked Pepper to taste

 

DIRECTIONS


1. Heat the oil in a large pot over medium heat. Add the onion and carrots and sauté for about 5 minutes or until the onion is translucent.

2. Add the ginger and cook for one minute or until fragrant.

3. Add the veggie broth, coconut milk and lentils. Bring to a boil, cover and let simmer on low heat for 20 minutes.

4. Remove from heat. Use an immersion blender to puree soup until smooth or transfer to blender until smooth.

5. Serve warm, with an optional sprig of your favorite herb and enjoy!
