Self Love Soup



Prep Time: 10 Minutes Cook Time: 20 Minutes Total Time : 30 Minutes Serves: 2-3


 


 

INGREDIENTS


1 small white onion, thinly sliced

1 tbsp sesame oil

3 cups vegetable broth

1 cup canned coconut milk

3 tsp liquid aminos

1 tsp rice vinegar

7 oz extra firm tofu, diced into cubes

1 tbsp pickled ginger

2 cups kale, chopped

1/2 lemon, juiced

 

DIRECTIONS

1. Bring a medium sized pot to medium- high heat.


2. Sauté the onion in sesame oil until onion becomes translucent. 3. Add the rest of your ingredients, and bring to a boil. Then, cover reduce to low- medium heat and let simmer for 15 - 20 minutes.


4. Serve and enjoy!
